What counteracts the taste of vinegar?

Sourness comes from acidic ingredients (including tomatoes, wine and vinegar). If your dish tastes too sour try to add sweetness—think sugar, honey (it's healthy!), cream or even caramelized onions. You can also dilute the dish (same as you would with a dish with too much salt).
There are other ways to neutralize vinegar. You can use table salt, milk, cream of tartar, or lemon juice to counter the acidity of the vinegar.
Add Baking Soda
The baking soda will take the vinegar, transforming CO2 and water. As a result, the vinegar will become less acidic. In other words, the alkaline will counteract vinegar's effect. So, you can try adding a pinch of baking soda to the food to cut the vinegar taste.
To reduce the vinegar [1] taste in hot sauce, you can start by adding a tiny amount of baking as this will neutralize the acidity. It can also be achieved by balancing the flavors with sweetness or saltiness, adjusting the amount of vinegar used, adding additional spices, or using alternative ingredients.
Drop-in some essential oils: Lavender, peppermint, rosemary — whatever you've got! It'll disguise the harsh smell of vinegar instantly.

Mixing baking soda and white vinegar is not the be-all, end-all cleaning solution. Used separately, both substances are great. Together, though, they cancel each other out.

Baking Soda And Vinegar

When baking soda is mixed with vinegar, something new is formed. The mixture quickly foams up with carbon dioxide gas. If enough vinegar is used, all of the baking soda can be made to react and disappear into the vinegar solution.
The two products generate quite a reaction. When vinegar (dilute acetic acid) and baking soda (sodium bicarbonate) mix together, the pair "foams up" to produce carbon dioxide gas, as well as liquid water, acetate ions and sodium ions. The carbon dioxide gas is what produces the bubbles.
Many sources recommend adding a pinch of baking soda to a sauce that's overly tart, which raises the pH and makes it less acidic. We've always preferred adding a bit of sugar.

There is no chemical reaction whatsoever between vinegar and salt. In solution, both will dissociate and mix thoroughly.
You can offset the extra vinegar by adding small pinches of sugar to moderate the acidity. Stir the dish well and taste after each addition to keep from overcompensating. Add small quantities of salt to balance the acidity.
